Lentil Stew

  1. In a dutch oven, heat ghee and saute celery for 5 mins.
  2. Add diced sweet potatoes and cauliflower and saute for 10 mins.
  3. Add spices and swirl it around until there it is evenly distributed.
  4. Add vegetable stock, coconut milk, water and lentils and simmer over med low heat for an hour. Periodically scrape the foam off the top.
  5. Ten minutes before serving, add peppers and spinach.
